Who could ever say no to green eggs and ham? “Sam I am” of course! Have a little fun with the book Green Eggs and Ham to celebrate Dr. Seuss’ birthday and Read Across America day (March 2). Have your child read the voice of Sam while you read the other parts. Then use this green eggs and ham recipe to whip up and enjoy a tasty meal together!
Simple version:
Add green and blue food dye to a batch of scrambled eggs until the eggs are the desired shade of green. Warm up some ham lunch slices to go with your eggs.
Healthy version:
What you need:
A bit of butter or oil
4 eggs
1/3 cup spinach
1/2 cup of avocado, diced
salt and pepper
What you do:
Saute spinach in hot pan with melted oil until wilted.
Add beaten eggs and avocado with a drop of green food coloring, if desired.
Scramble and cook to desired doneness.
Serve with warmed ham.
